Rice Krispies on Haddock - Try It You'll Like It!

Many years ago, in an attempt to eat healthier, my mother created a recipe to replace her favorite fried haddock.  Her delicious haddock recipe was passed on to me and then to my daughters.

It is one of our family favorites, very easy to make, and much healthier for those looking to cut fried foods from their diet.

HADDOCK A LA RICE KRISPIES

1 lb Fresh Haddock

1 C Rice Krispies

1 egg white

3 Tbsp Butter  melted

Salt and Pepper

rice cereal

For an even healthier recipe:

I use the Organic crispy rice cereal

made by Erewhon.

It is available at health food stores and many

of the chain grocery stores are carrying it now.

Also, I use 1/2 melted butter and 1/2 olive oil,

instead of all butter.

 cereal in bag

Start by placing rice cereal in zip lock bag and crushing with rolling pin or meat tenderizer.

You don't have to pulverize it, just break it up enough that some of the cereal is crushed and some is still whole.

Prepare broiler pan by covering with foil and spraying foil with non stick spray.  Preheat oven to 375.

Place egg white in bowl and beat together with 1 Tbsp. water.  Dip haddock in egg white and then place into bag of cereal.

Think Shake 'N Bake.  Toss fish around in bag until coated.

fish

Place fish on pan.

Pour remaining cereal on top of fish.

Salt and Pepper.

Drizzle melted butter over top.

Bake at 375 degrees 10 - 12 minutes, until fish is white and flakey.

Sharon, that sounds good and easy. I like recipes that don't need a lot of complicated ingredients. I also really like something that doesn't take long to prepare or cook. Normally I don't start cooking until I am starving and then I want something right away! :)

when i make this it's even simpler - i don't crush the rice crispies or use egg whites.  i just put some rice crispies in the pan, place the fish on top, dump more rice crispies on top of that, press them down a bit then pour melted butter over the whole thing.

Jen:  I hope you give it a try and enjoy it.  Let me know.

Jaime:  I've been known to take the easy way out myself.  Fish, cereal, butter...that's what's important!

Sharon, we can't get fresh haddock here and I miss it from growing up in New England. I'm going to try this on catfish! Thanks for sharing the recipe

Debbie:  I'm sure it would be wonderful.  I've used it on chicken fingers too.

Hi Sharon. This sounds VERY tasty. I have had Corn Flakes on Tilapia before so this would be a variation. I love great recipes.

Gary:  You will have to let me know if you try it.  It is one of my family's favorites.

Grace:  The olive oil is much healthier, for sure!  I hope you enjoy it!
