Looking for a healthy, diet friendly alternative to lasagna? This version will satisfy your craving for Italian, without adding the unwanted pounds.
The key is losing the carbs and fat that traditional lasagna is famous for...the noodles and the cheese.
Zucchini Bake - Diet Friendly Lasagna
5 Med. Zucchini
1 Med. Onion (chopped)
1 sm pkg. Mushrooms (sliced)
Ground Turkey (20 ou pkg)
1 Can (28 ounce) Tomatoes
1 Can (6 ounce) Tomato Paste
Oregano
Salt and Pepper
3/4 Cup Shredded Mozzarella
1/2 Cup Grated Parmesan
Start by slicing the zucchini, lengthwise into thin tongues. You should get approximately 4-5 slices per zucchini. Place in steamer or steamer basket and cook until tender. These will be your noodles.
While zucchini is cooking, saute onion and mushrooms in olive oil in large skillet over medium heat. Once onions are clear and mushrooms are golden, remove from pan and set aside.
Add a little more oil to pan and cook ground turkey, breaking it up into small pieces, until fully cooked.
Return onion and mushrooms to pan and mix with turkey.
Add tomatoes (use crushed or put whole tomatoes into blender first). Add paste and mix well.
Add oregano, salt and pepper to taste. Simmer for 15 - 20 minutes.
Preheat oven to 375
Spread a little sauce on the bottom of a 9x11 casserole dish. Place 1/3 zucchini "noodles" across bottom of pan. Cover with meat sauce. Sprinkle 1/3 of the mozzarella and 1/3 of the parmesan over top.
Repeat layering zucchini, sauce and cheeses for two more layers, ending with cheese on top.
Bake until cheese melts...15-20 mins.
Enjoy!!

Mmmm sounds delicious! I will have to try that recipe out!~
Great alternative to traditional lasagna and certainly would satisfy that craving for good ole' Italian food..............I'm going to have to give this one a try Sharon.................thanks for your support in this group in spite of the fact you don't have weight to lose, you lucky girl...............you've inspired us all to eat healthier................GO SHARON! Thanks for another fabulous recipe.
Sharon- you must have known that Larry and I ate non-stop on our road trip! It looks not only healthy but good as well!
Maggie: I hope you do try it, and I hope you like it as much as I do.
Roger: I bet you could get creative and add some other ingredients and really make it your own...let us know what you come up with. Dieting isn't just for losing weight, it's for feeling better and having more energy and preventing disease and living longer too!
Kathy: That's just part of the road trip experience. Now that you are back, I'm sure you will make up for it, right?????
Okay, now you're making me too hungry. Love your recipes and photos, Sharon. I'm leaving the office and headed home to raid the frige!
Oh Sharon, I am going to try this one!
Lee & Carol: Hope there is more in your frige, than there is in mine right now! I'm so glad you are enjoying my recipes.
Laura: Can't wait to hear what you think...make it your own and tell me all about it!
Hi Sharon, looks really yummy, bon apetit!
Hi Sharon,
LASAGNA...without the high calories? Now that's my idea of a great dinner idea!
Barbara: It is good and you really don't miss the noodles or cheese...you can add other veggies if you like.
Michelle: Give it a try and let us know what you think.
Hi, Sharon. I use fat-free mozzarella and fat-free ricotta when I make lasagne in an attempt to reduce the fat but I'd do more, if I could and now I can. What a great recipe!
Leslie: I read somewhere, not even sure where now, that the reduced fat cheeses are not as healthy for you. The process does something to the cheese. I use the real deal, just a lot less of it.
Sharon does 'healthy, diet friendly' and lasagna really belong in the same sentence?...This looks delicious...Thanks...Enjoy the day.
Ernie: I'm not sure this even qualifies as lasagna, LOL! It is good though and I bet you would like it!
Sharon, what a super idea to use zucchini instead of pasta! Thanks for sharing. You could put a cookbook together.
Pat: I don't think I could...the cookbook would just lead to my own cooking show and I don't have the time for that!
You are too funny, girl! You could be missing out on the next Martha Stewart empire!
Pat: If only.....Thanks!
Sharon,
Can't wait to try it - looks and sounds really good. I bet the zucchini would actually taste BETTER than noodles!
That's what I'll do with this zucchini!
Joyce: It really is good, I hope you enjoy it!
Corie: Glad I could be of help, lol!
