Now that the weather is starting to cool down, it's time to heat up the oven for some homemade comfort food. It's not as convenient as prepackaged commercial pot pies, but my chicken pot pie is much healthier for you.
This recipe calls for precooked chicken. I usually bake chicken for dinner one night and then use the leftover for the pot pie the next night.
Healthy Homemade Chicken Pot Pie
2 Medium Potatoes
2 Large Carrots
1/2 Onion (chopped)
4 ounces Mushrooms (sliced)
Precooked chicken (cut into bite size pieces)
Chicken Gravy*
Single Pie Crust (I use Trader Joe's frozen pie crust - see NOTE)
Preheat oven to 425
Peel the potatoes and carrots and cut into bite size pieces. Place in pan and put just enough water to cover them. Cover and bring to boil. Simmer until tender. Drain, saving water for gravy if needed.
Saute chopped onion and sliced mushrooms in olive oil.
Place chicken as first layer in pie plate. Top with mushrooms, onions, potatoes and carrots.
Add chicken gravy and place pie crust over top.
Bake until crust is golden brown, approx. 25 minutes.
*Two Options for Gravy:
1. Really Healthy Gravy
Add 1 1/2 Cups water to 2 TBSP of almond butter and mix to make smooth "milk".
Mix 1 TBSP of cornstarch with a little of the almond milk to make a thin paste and then add paste to almond milk mixture. Add 2 TBSP Tamari or soy sauce. Cook over low heat until thickened. Season with salt and lemon juice to taste.
2. Quick White Sauce Chicken Gravy
Over low heat, melt 2 TBSP butter. Slowly add 2 TBSP flour, mixing until well blended. Stir in slowly, 1 Cup chicken broth. Add some of the water from boiling the potatoes and carrots to thin if needed. Add salt to taste.
NOTE: The Trader Joe's pie crust is very good, and the ingredients are the healthiest I've seen in a commercial product.

Lee & Carol: My traditional Shepherds Pie is quite simple:
Scramble some hamburg and chopped onion and place in baking dish. Pour two cans of cream style corn over the meat. Cover with mashed potatoes. Bake.

Hi, Sharon. Chicken Pot Pie is something I avoid...too many BAD memories from my childhood of "Table Talk Chicken Pot Pie"...some commercial thing my mother liked to serve because it was easy. The crust was like cardboard and the dyed peas floated in something that looked and tasted like watered-down library paste.
My riding buddy remembers HER mother serving Table Talk Chicken Pot Pies and, when we eat out, we always joke that we are NOT ordering CPP!
