Here's one of my favorite dinner recipes. It's also great for bringing to a pot luck or family party. If you like olives, you will love this dish.
Chicken and Olives On Rice
2 lbs boneless skinless chicken breast
4 tablespoons olive oil
1 medium onion, chopped
1 28 ou can whole tomatoes
1 6 ou jar green olives
black pepper to taste
1 tablespoon oregano
1 cup red wine
Cut chicken into bite size pieces. Brown chicken in olive oil. Remove chicken from pan and set aside.
Saute onions until limp. Cut tomatoes into bite size pieces and add with juice to onions. Add olives, pepper, oregano, wine and chicken.
Cover and simmer until chicken is tender, about 30 minutes.

Serve over rice with your favorite veggie.
Serves 4

Good looking recipe!
Sharon...I'm pretty sure I couldn't do this as well as you , for the sake of trial and error could you just come over and cook? Thanks I'll cut and paste this, to print it looks great.
Sharon, just saw this on Twitter. I had no idea there was a place to post recipes on AR. Thanks for making me aware of the groups. This looks yummy and the pictures are great!
Sharon, I'm drooling here! This looks delicious. Thanks for the recipe.
I'm glad someone posted a recipe. I love reading them, and looking at the photos. Thanks!!
Sharon,
What a great recipe. My wife is a huge olive fan. I will give this one a try.
Sharon what a great job you did with this! The pictures look great-looks fabulous!
Clason: Tastes really good too!
Steve: Is this another one of those man mind games where the guy acts all helpless to get the woman to do things so he doesn't have to? Nice try! Don't underestimate yourself...it's easy. Let me know how it turns out.
Patsy: There are several recipe groups. I'm glad I helped you find them. Plenty of great recipes being shared so enjoy!
Laraine: Hope you enjoy it! Does Ralph like olives?
Carla: Plenty of people are sharing recipes. I've found many good ones from AR members.
Richard: Does this mean you are making dinner for your wife tonight? What a lucky woman!
Debra: Thanks! I enjoyed doing it. I think pictures are very important to a recipe. It really helps to know what to expect and it helps to better understand the directions if they aren't really clear.
I shall have to try that. I'll have to have two cups of red wine, though, because I'll drink one cup while I'm cooking. LOL

Looks delicious Sharon! I am going to try it tonight!
Russell: That's a great idea! Bon Appetit!
Michele: Great! Let me know what you think.
Sharon- so glad I saw this AFTER dinner. It looks easy to make and good too. Will give it a try.
Kathy: I hope you do give it a try, and please let me know how the family likes it.
Yum! I would never in a million years have thought to put green olives in that dish. But the thought is intriguing!
Janna: It's pretty simple, and it is really tasty. It's always a hit when I bring it somewhere. I hope you will give it a try.
Wow Sharon:
Looks like a great recipe and great photos. I am with Russel when it comes to the extra wine. Wine should aways be given to the chef while they toil over a hot stove! LOL
Ron and Alexandra: I hope you give it a try...open a nice bottle of wine and bake some bread to go with it!
Hi Sharon,
This recipe looks great. No one ever uses green olives for cooking, so it is quite different. I've got a recipe with olives, but its not what I would call healthy - Thank you
John: This is a Tara family favorite. I hope you enjoy it as much as we do!
