Favorite Chicken And Olives Recipe

Here's one of my favorite dinner recipes.  It's also great for bringing to a pot luck or family party.  If you like olives, you will love this dish. 

Chicken and Olives On Rice

ingredients2 lbs boneless skinless chicken breast

4 tablespoons olive oil

1 medium onion, chopped

1 28 ou can whole tomatoes

1 6 ou jar green olives

black pepper to taste

1 tablespoon oregano

1 cup red wine

 

 

Cut chicken into bite size pieces.  Brown chicken in olive oil.  Remove chicken from pan and set aside.

Saute onions until limp.  Cut tomatoes into bite size pieces and add with juice to onions.  Add olives, pepper, oregano, wine and chicken.

Cover and simmer until chicken is tender, about 30 minutes.

Serve over rice with your favorite veggie.

Sharon...I'm pretty sure I couldn't do this as well as you , for the sake of trial and error could you just come over and cook? Thanks I'll cut and paste this, to print it looks great.

Debra:  Thanks!  I enjoyed doing it.  I think pictures are very important to a recipe.  It really helps to know what to expect and it helps to better understand the directions if they aren't really clear.

I shall have to try that. I'll have to have two cups of red wine, though, because I'll drink one cup while I'm cooking. LOL

Yum!  I would never in a million years have thought to put green olives in that dish.  But the thought is intriguing!

Wow Sharon:

Looks like a great recipe and great photos.  I am with Russel when it comes to the extra wine.  Wine should aways be given to the chef while they toil over a hot stove!  LOL
